Mint Choc Chip Ice Cream


The flavour of this ice cream is mild and refreshing and it makes a great dessert or snack on a hot summer’s day. Every ingredient adds nutritional value, making it a great, guilt-free snack at any time. I love the smooth, creamy flavour that blended frozen banana gives, it is so versatile and can be used as a base for so many things. I’m looking forward to when the weather heats up and I can invent many more exciting, new ice cream flavours.

Mint Choc Chip Ice Cream

Serves: 2
  • 25g (one bag) Mint Leaves
  • ½ Cup Almond or Rice Milk
  • ½ an Avocado
  • 1 Frozen Banana
  • 2 Medjool Dates
  • 1 Tbsp Maple Syrup
  • 2 Tbsp Cacao Nibs
  1. Place the mint leaves, dates and almond milk in the processor and blend until smooth
  2. Add all other ingredients except the cacao nibs and once again, process until smooth
  3. Add the cacao nibs and process for 5 seconds until evenly distributed but not ground down
  4. Serve straight away, topped with more cacao nibs, or freeze in a container
  5. Remove from the freezer 10-15 minutes before service to soften
